The Jewish calendar is essentially composed of three units that depend on a heavenly body for proper calculation. The month is dependent upon cycles of the moon, and the day and the year are dependent upon cycles of the sun. For the purposes of our discussion, we will focus on the "month" and the "year." ( The following discussion is oversimplified for clarity's sake.)   The Jewish nation was instructed to bless and sanctify each new month. The month is the period of time it takes for the moon to complete a revolution around the earth. On the average, this takes 29.5 days. As we only have complete days in a month, some months contain 29 days, and other contain 30.

Beitzah The Roasted Egg is symbolic of the festival sacrifice made in biblical times. On Passover, an additional sacrifice (the Paschal lamb) was offered as well. The egg is also a traditional symbol of mourning, and has been interpreted by some as a symbolic mourning for the loss of the Temple. Since the destruction of the Temple in the year 70 C.E., neither the festival sacrifice nor the special passover sacrifice could be offered. It is also a symbol of spring - the season in which Passover is always celebrated. In many households, it is customary to use a brown egg on the seder plate. Latke Chicken

This is a real family pleaser. 
The apples and honey make it an appropriate dish for Rosh Hashanah dinner.

3 tbsp. olive oil
2 large onions, sliced
4 apples, cored and sliced
2 packages potato pancake 
  (latke) or 1 package 
  Mrs. Manischewitz 
  Sweet Potato Pancake Mix

½ cup egg substitute, 
    or 1 egg and 2 egg whites
2 chickens, cut-up parts, skin 
   removed from larger pieces
1 cup chicken broth
1 cup orange juice
½ cup honey
Preheat the oven to 425 degrees. Spread the oil on the bottom of a baking pan. Place the sliced onions and apples in the pan, and mix to coat with the oil. Place the pan in the oven while you prepare the chicken.

Place the latke mix on a plate, and the egg substitute or egg and egg whites in a shallow bowl. Dip the chicken pieces in the egg, then roll in the latke mix.

Remove the baking pan from the oven, and arrange the coated chicken pieces on top of the onion mixture. 

Mix the chicken broth, orange juice and honey together. Pour approximately 1/3 of this mixture in the pan around the chicken. Reduce oven temperature to 350 degrees, and bake, uncovered for 30 minutes. 

Pour the remaining mixture over and around the chicken. Continue baking another 45 minutes or until chicken is thoroughly cooked. Serves 8.
