What is Shmurah Matzah?  Shmurah means watched, and it is an apt description of this Matzah (unleavened bread). The wheat used to bake it is carefully watched (protected) against any contact with water from the moment it is harvested, since water would cause leavening and thus disqualify it for use on Pesach.
